Restaurant Series III: Benchmarking Performance and Financial Reporting Tools

Individuals will learn how to develop an effective operating budget for their restaurant based on industry average target cost ratios to include key expense categories and important profit line. Weekly and period-end reporting strategies will be demonstrated, comparing actual performance budget and how to turn variances into actionable goals.
